好啦 不多說 趕緊把他給我的食譜給我
因為那時候我想說買一隻吃不玩 所以我買半隻= =
可以去bham indoor market 買 一隻不貴 還可以商量價前lol
材料請看看:
鴨duckling......半隻
麥芽糖.4 tablespoons maltose or honey....一些 (可以用蜂蜜代替) 但我去廚房偷挖一點 ....這是秘密請不要告訴別人

甜面醬hoisin sauce.*(duck sauce)....適量 *(我最後有吵過 ㄚ基師有交炒過比較香~

蔥白..chopped spring onion...適量 (我很懶 我那時候買大蔥來切= =)
很燙得水 hot hot water 要準備很多 趟鴨皮!!!!!!!!!~
外面那層皮....中文怎說 = =?????餡餅嘛?? 就皮拉!!!
材料:
中筋麵粉 plain flour.....250g
hot 水 很燙得水.....120 c.c
cold water .....60~50 c.c
來囉做法~~~~~~~~
做法:
1.鴨子買回來請洗乾淨.如果你是整隻鴨你可以把鴨插在酒瓶上(我買半隻所以我把他放在詹版上 ==)
Clean the duck well. if its one duck u can put on a bottle of wine (its easy for later)

用很當很燙很燙的水淋在鴨皮上,直到鴨皮收縮(水一定要很很燙鴨皮才會分離烤出來才好吃喔!!)
hot hot water all over the duck , makes the skin n meat separate
麥芽糖或是蜂蜜用熱水調開成麥芽糖水(不用用成像醬料,希希得的就可以了)
Dissolve the maltose or honey, brush it all over the duck
把調成得水刷在鴨皮上第一次!!

等了1小時後再刷第二次 ,然後把鴨放在通風處讓鴨子風乾約5~6小時或是第一天晚上做,第二天鴨子就會乾到快皮肉分離
afrer one hour,brush it all over the duck again, and put the duck . hang the duck up to dry in an airy and cool place for at least 5 - 6 hours
or u can make it one day before and dry the duck 1 day
3.鴨子風乾後在肚子裡塞滿蘋果and洋蔥烤出來會比較香~~lol
apples and onion in the duck when roast the duck

4.接著把鴨胸朝上放在烤盤上,烤箱預熱200度烤40分鐘後,調整溫度 至150 度再烤40分鐘

and last 200 degree 40 mins

最後~~~~~再用200度烤40分鐘直到鴨皮成平常大家吃烤鴨的顏色~~救完成了!!!
我太貪心突然把鴨子太靠近上層*(因為大魔王下班快回來,.its not excuse!!!!!)
救有點焦~但還是很好吃!!

外面得皮= = 做法~~pancakes makeing

plain flour with hot water , and them cold water
麵粉過篩之後 加入熱水 = = 用筷子因為很燙ㄚㄚㄚㄚ~~~~
有片狀之後 在加入冷水

我喜歡把他捲捲捲 然後再桿成一片片得

之後在放到平底鍋上烤過 有點焦焦 ㄉ ~好囉!!
可以在麵粉裡面加一點點鹽巴 == 我家大魔王吃比較鹹一點點~~~~
